Ingredients (use vegan versions):
- 1/2 cup of black bean mixture containing black beans sauteed with 1 clove garlic, 1 medium onion (chopped), 1 bell pepper (chopped), and 1 can of low sodium corn kernels, drained, and vinegar
- 1/4 cup of white rice, cooked
- splashes of hot sauce
| | (depending on how spicy you like your food)
1 teaspoon lemon juice
3 tablespoons of flour, plus extra for dusting
salt and pepper to taste

Directions:
Sautee the ingredients found in the "black bean
mixture" together until heated through. Steam
the rice until it fluffs with a fork. Let both
the rice and the black bean mixture chill in the
refrigerator for about 20 minutes. Now, you
will take 1/2 a cup of the black bean mixture
and 1/4 cup of rice. Mash them together in a
bowl with a fork until the black beans
themselves are mashed. Add the lemon juice and
hot sauce, salt and pepper. Next, add the flour
and continue to mix. Form balls about the size
of small falafel patties (about a tablespoon
size ball) and pat them into patty shape. Heat
your pan on high heat and spray with cooking
spray (I prefer olive oil flavored). Dust the
patties with flour and place in the pan. Cook
on each side until golden brown and
crispy....they're really good, enjoy!
