Black Eyed Peas and Veggies


Ingredients (use vegan versions):
  • 1/2 cup frozen corn
  • 1 small onion
  • 1 can black eyed peas
  • 1 tablespoon thyme
  • 2 teaspoon rosemary
  • 2 teaspoon marjoram
  • olive oil
Directions:

I'm starving and we have no food in our kitchen. I just pulled

this together from a half used bag of corn, half used onion and our last can of beans. It turned out great! I think some sort of squash would be great in this, too.

Pour a bit of oil in the pan, and put in the frozen corn and onions. Cook until the corn is unthawed and the onions are translucent. Drain and add the can of beans. Add the seasonings. Cook until the beans are done, and eat. mmmm

Serves: 2-3

Preparation time: 5 minutes
