Butter Bean and Potato Curry


Ingredients (use vegan versions):
  • 4 medium sized potatoes
  • 1 can of tomatoes
  • curry powder (medium)
  • 1 onion
  • 1 can butter beans
  • a little oil
Directions:

Peel potatoes and cut into bite sized pieces put on to boil cook to taste,about 15 mins. Peel

and slice the onion then fry lightly in a little oil adding 2tbsp of curry powder to the onion to fry with it for a few mins,then add the tinned tomatoes. Leave this to simmmer for approx 20 mins.

When the sauce is cooked add the potatoes and can of drained butter beans. Heat through and serve with rice or nan vegan bread.

Serves: 2
