Maple Corn Muffins


Ingredients (use vegan versions):
  • 1 cup whole wheat flour
  • 1 cup yellow or blue corn meal
  • 1/2 teaspoon salt optional
  • 1 tablespoon baking powder
  • 1/2 cup vegan maple syrup
  • 1 cup water
  • 1 Ener-G Egg Replacer
Directions:

Mix 1st 4 ingredients

in a bowl. Add in liquid ingredients. Mix gently. Place in small muffin pans. Bake at 400 for 15 minutes. Makes 24 small muffins or 6 medium muffins.

Serves: 6
