Muffins


Ingredients (use vegan versions):
  • 1 cup white flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/4 cup vegan sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons
vegan maple syrup
  • 1 cup applesauce
  • 1/2 cup soymilk
  • 2 tablespoons vegetable oil Directions:

    In a large bowl, mix together all dry ingredients. In a medium, separate bowl, mix together all wet ingredients. Mix two mixtures together. Bake at 350* 10-15 minutes or until golden brown, in a greased muffin sheet. Makes 12 muffins.

    Serves: 12
