Fruity French Toast


Ingredients (use vegan versions):
  • vegan bread (lightly toasted)
  • 1/2 peach
  • 1/2 cup strawberries
  • 1/2 mango
  • 2 tablespoons agave nectar or favorite honey substitute
  • 2 tablespoons vegan soymilk powder
Directions:

I like using frozen fruit for this recipe,

but fresh works well, too.

Blend fruit in the blender with agave nectar and vegan soymilk powder.

With a pastry brush, spread fruit mixture over bread generously.

Put bread in a pan over medium heat, and flip when side begins to brown.

This is good by itself.

Serves: 6

Preparation time: 15 minutes
