My Farm Ginger Buckwheat Waffles


Ingredients (use vegan versions):
  • 2 cups dark buckwheat flour
  • 3/4 cup water
  • 1/4 cup olive oil
  • 1 tablespoon molasses
  • grated rind and juice of one lemon
  • 2 tablespoon powdered ginger
  • 4 teaspoon baking powder
Directions:

Combine all ingredients

and beat together well. Bake on hot greased waffle iron about 5 or 7 minutes. Serve warm with vegan syrup or cold with nut butter and jam.

Serves: 6
