Oatmeal Bake


Ingredients (use vegan versions):
  • 3 cups quick oats
  • 3/4 cup vegan brown sugar or sucanat
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup melted vegan margarine
  • egg substitute for 2 eggs, prepared
  • 2 cup soymilk or rice milk
  • 2 teaspoon baking powder
  • 1 teaspoon
salt
  • 1/2 cup raisins (optional) Directions:

    Mix all ingredients together. Pour into a greased 13" x 9" pan. Bake at 350 F for 25 minutes.

    I have also used blueberries in this recipe, but if you decide to do that, make sure they are not frozen, it gets too mushy.

    Serves: 9-12

    Preparation time: 45 minutes
