Oatmeal Pancakes


Ingredients (use vegan versions):
  • 1 cup cooked oatmeal (steel cut is best)
  • 1 cup whole wheat or 50/50 flour
  • 1/2 package yeast
Directions:

Mix the yeast with 1/4 cup warm water and proof it. Add the cooked oatmeal and flour. Mix in enough water to make

a pancake batter. Leave it out overnight and bake on a preheated griddle in the morning.

These are *wonderful* with crushed fresh strawberries.

Serves: 4

Preparation time: 10 minutes
