Pasta Neopolitana


Ingredients (use vegan versions):
  • 1 tin chopped tomatoes
  • 1 onion chopped finely
  • 1 teaspoon dried basil or 1 tablespoon bruised basil leaves
  • 1/2 teaspoon dried tarragon
  • 1/2 teaspoon dried oregano
  • 1 tablespoon tomato puree
  • 2 cloves garlic crushed
1/2 tablespoon olive oil Directions:

Heat the olive oil in a pan, add the chopped onions and garlic. Sautee until golden.

Add the herbs, chopped tomatoes and tomato puree. Simmer for 15-20 minutes.

Season to taste with plenty of crushed black pepper, and a pinch of salt.

Serve over cooked pasta, perhaps with a sprinkling of cheese if desired.

Serves: 2
