Pasta and "Meat" Sauce


Ingredients (use vegan versions):
  • 1/2 Sliced onion
  • 1/4 diced green pepper
  • 1/4 cup Capers
  • 1-2 medium cloves minced garlic
  • salt and pepper to taste
  • oregano, thyme, marjoram, parsley to taste
  • 8 oz can of diced tomatoes
  • 3/4 cup Boca Burger Basic Recipe
(ground)
  • casein-free soy parmesan
  • pasta of your choice..... penne is quite good!
  • 1 tablespoon olive oil for cooking Directions:

    Cook onions and pepper in oil until soft; add garlic, then capers. Season with salt, pepper and spices. Cook for 2-4 minutes to blend flavors. Add diced tomatoes and a bit more salt. Cook for 1-2 minutes. Add ground Boca Burger and simmer for about 2-3 minutes. Stir occasionally to mix the "meat" with the sauce. Sprinkle a layer of soy parmesan over the sauce, cover and simmer on low until pasta is cooked, drained and ready to eat! ENJOY!

    Serves: 2-3
