Pasta Frijoles


Ingredients (use vegan versions):
  • Dried Lima beans - one small bag
  • 1 small onion
  • 1 clove garlic
  • salt
  • pepper
Directions:

Soak beans over night. Simmer all ingredients together for an hour or two until beans

are very soft. Mash the mixture a little with a wooden spoon or potato masher until mostly smooth. Serve over a hearty pasta like macoroni or rigatoni.
