Easy and Tasty Ratatouille


Ingredients (use vegan versions):
  • 1 large green pepper (or 2 medium)
  • 1 large onion
  • 1 large zucchini
  • 1 can of stewed tomatoes
  • salt and pepper (to your own taste)
  • a dash of paprika
  • 2-3 tablespoon non-hydrogenated vegan margarine
Directions:

Melt margarine in a large pot. Slice all vegetables and put in pot, get the margarine on 'em good then add stewed tomatoes and salt, pepper and paprika. Allow to simmer for 15-20 minutes, depending on how crunchy you like the veggies!

Serves: about 5.

Preparation time: 25 minutes.
