Fajita


Ingredients (use vegan versions):
  • 6 large Italian mushrooms
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 large onion (I used a yellow)
  • 2 tablespoons oil
  • dash salt
  • fajita tortillas
  • some water
Directions:

Cut

mushrooms in slices removing stems, set aside. Cut onion and peppers into slices. In a skillet heat oil add peppers and onion. Cook until almost caramelized, add salt, mushrooms and water. Water should dissipate. Remove from heat and enjoy.

Serves: 6-8
