Italian Pasta Salad


Ingredients (use vegan versions):
  • 3 oz. whole wheat pasta (any shape)
  • 1 scallion
  • 4 olives
  • 1/2 small red pepper
  • 1 slice whole wheat bread
  • 1/4 cup tofu (I use extra-firm)
  • 1 1/2 tablespoon olive oil
  • 1 teaspoon cider vinegar
  • pinch of garlic salt
pinch of pepper
  • pinch of oregano Directions:

    Cook the pasta, drain, and let cool. Chop the scallion, red pepper and olive finely. Toast the bread and dice it.

    Dice/or crumble the tofu. Place all the ingredients together in a bowl. In a separate bowl mix the oil, vinegar, garlic salt, oregano and pepper then poor over the pasta mixture. Mix well. enjoy!

    Serves: 1
