Ingredients (use vegan versions):
- 4 cups torn fresh spinach
- 1 cup cauliflower
- 1 cup sliced fresh mushrooms
- 1 cup cherry tomatos, halved
- 1 small cucumber, sliced
- 1/2 small red onion, think sliced and sperated into rings
- 1 16oz can garbanzo beans, drained
| | 1/2 cup coarsely chopped walnuts
dressing of own choice
1 teaspoon toasted sesame seeds
Directions:
Place spinach in salad bowl; top with cauliflower, mushrooms, tomatos,
cucumber, onion, bean and nuts. Mix dressing in and sprinkle sesame seeds
on top.
Serves: 2-6
Preparation time: 30 min
Nutrition Information: High in calcium, protein, iron and other minerals. Low in fat, if low fat dressing used.
