Meatless Meal in a Bowl


Ingredients (use vegan versions):
  • 4 cups torn fresh spinach
  • 1 cup cauliflower
  • 1 cup sliced fresh mushrooms
  • 1 cup cherry tomatos, halved
  • 1 small cucumber, sliced
  • 1/2 small red onion, think sliced and sperated into rings
  • 1 16oz can garbanzo beans, drained
1/2 cup coarsely chopped walnuts
  • dressing of own choice
  • 1 teaspoon toasted sesame seeds Directions:

    Place spinach in salad bowl; top with cauliflower, mushrooms, tomatos, cucumber, onion, bean and nuts. Mix dressing in and sprinkle sesame seeds on top.

    Serves: 2-6

    Preparation time: 30 min

    Nutrition Information: High in calcium, protein, iron and other minerals. Low in fat, if low fat dressing used.
