Pasta Bean Salad


Ingredients (use vegan versions):
  • 2/3 cup Veganaise
  • 2 tablespoon dried basil
  • 4 teaspoon apple cider vinegar
  • 1 tablespoon spike seasonings
  • 1 1/2 cups dried whole wheat pasta
  • 1 can dark red kidney beans
  • 1 large tomato
  • 1 red bell pepper
Directions:

Mix

first four ingredients and set aside.

Cook whole wheat pasta according to directions. Don't over cook. When done rinse in cold water, set aside. While pasta is cooking chop tomato and bell pepper. Drain and rinse beans. Add all ingredients together and serve cold. Very good!

Serves: 4
