Gazpacho Ridiculously Easy But Good


Ingredients (use vegan versions):
  • 1 28 oz. can diced tomatoes
  • 2 cucumbers, peeled and cubed
  • 2 tablespoon vegan Worcestershire sauce (or to taste)
  • pepper (to taste)
  • dash tabasco (optional)
Directions:

Place all ingredients in med-large tupperware

and refrigerate for at least an hour.

There! I have to admit I wouldn't serve this at a fancy dinner party, but it's a great light lunch or dinner for a busy person like me! Make sure you get a good brand of canned tomatoes.
