Micks Lentil Goodness


Ingredients (use vegan versions):
  • 250gm brown lentils
  • chopped carrot
  • half chopped onion
  • 5 mushrooms thin sliced
  • broccoli cut small
  • green round beans chopped
  • 2 vegetable stock cubes (any type)
  • 1 small clove crushed garlic
  • black ground pepper
pinch of thyme
  • extra virgin olive oil Directions:

    In a large Pot, Add Olive oil and heat. Add Chopped onion & mushrooms. Stir for a minute. Add half cup of Boiling water. Add Carrot, Brocoli, Green Beans & Stock Cubes. Add Crushed Garlic, pepper & Thyme. Stir for a minute Add Lentils. Add 4 Cups of Boiling Water. Simmer uncovered until Lentils go soft (stir occasionally).

    Note: You may need to add or reduce the amount of water depending on the amount of vegetables you add.

    Serves: 4

    Preparation time: Approx 30 mins
