Potato Corn Chowder


Ingredients (use vegan versions):
  • 2 tablespoon coconut oil-organic
  • 1 onion
  • 5 redskin potatoes medium size
  • 4 cups corn off cobb
  • 3 celery stalks
  • 6 cups water
  • 1 teaspoon thyme
  • 2 to 4 bay leaves
  • 5 cloves of garlic
  • 1 tablespoon sea salt
1/2 teaspoon black pepper grounds Directions:

Saute in oil onion, thyme, bay,and garlic until onion is translucent.

Add Potatoes(cut)and 2 cups of corn plus water and salt. Simmer 20 minutes (aprox).

Remove bay leaves(discard) and 1/4 of the soup. Blend and return to the pot.

Add remaining corn, celery, pepper(option:add leeks now). Adjust Seasonings.

Simmer 15-20 minutes until veggies are tender

Serves: 2

Preparation time: 35-40 minutes
