Peanut Butter Drops


Ingredients (use vegan versions):
  • 1/2 cup non-hydrogenated vegan margarine
  • 2 cups vegan sugar
  • 1/2 cup vegan soymilk
  • 3 cups rolled oats (works best with a little more)
  • 5 tablespoons peanut butter
  • 1 teaspoon vanilla extract
Directions:

Line

a cookie sheet with foil or waxed paper.

Melt the margarine in a large saucepan over low heat. Add the vegan sugar and soy milk, and increase the heat to medium. Bring the mixture to a boil for 1 minute. Remove from heat; add the oats, peanut butter, and vanilla; and mix vigorously.

Drop the mixture by spoonfuls onto the cookie sheet and let stand until firm.

Serves: 2 to 3 dozen drops

Preparation time: 20 min.
