Garlic and Herb Baked Vegetables


Ingredients (use vegan versions):
  • 1 zuchinni
  • 1 medium onion (optional)
  • 1 cup baby carrots
  • 1 cup mushrooms
  • 8 cherry tomatoes
  • 1/2 small eggplant
  • 1 medium potato
  • 1 package Garlic and Herb Potato Shaker Mix
  • *Different vegetables can
be substitued for any of the above vegetables. Directions:

Set oven to temperature as directed on Potato Shaker box. Chop all vegetables, except carrots and mushrooms, into bite size pieces. Place in shaker bag. Shake. Place on greased jelly roll pan. Spray vegetables with cooking spray. Bake as directed on box. Serve and eat. Great as a meal or a side!!

Serves: 4.
