Healthy Eggplant with Creamy Tomato Sauce


Ingredients (use vegan versions):
  • 1 medium eggplant
  • 3 tablespoon toasted sesame seeds
  • 1/2 teaspoon toasted cumin seeds
  • 1/2 fresh lemon
  • 1 1/4 rice milk
  • 1 teaspoon salt
  • black pepper
  • 1/2 teaspoon nutritional yeast
  • pinch of paprika
Directions:

Cut

eggplant into 1? thick slices. Brown both sides of slices in med high heat in a non-stick pan (no oil/water). While browning, combine all ingredients (except yeast and 1 tablespoon sesame seeds as topping) in blender and mix until smooth. Pour mixture into pan with slices. Cover and cook on low until eggplant is soft (20 mins - add water as necessary) Once done serve and sprinkle with nutritional yeast and some toasted sesame seeds (optional). Enjoy!!!
