Ingredients (use vegan versions):
- 1 lb bag of frozen, sliced okra
- 2 (14 oz) cans whole peeled tomatoes
- 1 (14 oz) can whole kernal corn
- 1 (14 oz) can cream-style corn
- 1 tablespoon salad oil
- salt, pepper, and garlic to taste
Directions:
Heat | | oil in skillet, add the okra and spices. Saute until okra
is soft (about 7-10 minutes). Add tomatoes (crush them with your hand
first) and the tomato juice. Simmer on med-high heat for 10 minutes.
Add the corn, and simmer another 10 minutes. Serve. This recipe is
great alone, or serve over a bed of brown rice. Contains very little fat.
Serves: 4-6
Preparation time: ~30 min.
