Okra, Corn, and Tomatoes


Ingredients (use vegan versions):
  • 1 lb bag of frozen, sliced okra
  • 2 (14 oz) cans whole peeled tomatoes
  • 1 (14 oz) can whole kernal corn
  • 1 (14 oz) can cream-style corn
  • 1 tablespoon salad oil
  • salt, pepper, and garlic to taste
Directions:

Heat

oil in skillet, add the okra and spices. Saute until okra is soft (about 7-10 minutes). Add tomatoes (crush them with your hand first) and the tomato juice. Simmer on med-high heat for 10 minutes. Add the corn, and simmer another 10 minutes. Serve. This recipe is great alone, or serve over a bed of brown rice. Contains very little fat.

Serves: 4-6

Preparation time: ~30 min.
