| the potatoes (not foil wrapped)
until they are done and the skin is
a bit "hard". While the potatoes are
baking, remove squash from skin and
steam until they are very soft.
When the baked potatoes are cool
enough to handle, remove potato pulp
from skin with large spoon. Extra
care should be taken when doing this
because you want the skins to remain
as intact as possible. While the potato
pulp is still warm, add the squash,
salt, and margarine until the mixture
is smooth and free of lumps. This
can be achieved with the aid of the
food processor. Fill this mixture into
the cavities of the potato skins and
you may swirl the tops with a fork to
make a nice design. Sprinkle with
paprika if desired. Return to the oven
at 400 degrees for about 10 minutes
to broil the tops. If made correctly,
these are TRULY DELICIOUS and have
a very elegant appearance and that is
wonderful if presentation is important
