Potatoes LeMay


Ingredients (use vegan versions):
  • 2 medium potatoes
  • 1 bell pepper
  • 1/2 medium yellow onion
  • 2 tablespoon soy sauce
  • 2 tablespoon "Frank's Hot Sauce" (it's not really that hot)
  • 1/2 tablespoon dill
  • 1/2 tablespoon thyme
  • 1 heaping spoon of tahini
salt and pepper to taste Directions:

Cut the potatoes into 1 inch chunks. I boil them for under ten minutes to speed up the process, and then set aside. Dice the onion and cut the bell pepper into small chunks. Fry in a wok or pan with your oil of choice till tender. Add potatoes. Sprinkle soy sauce and "Frank's Hot sauce" over vegetables. Add tahini and make sure that it evenly coats the vegies. Sometimes I clear a space in the center of the pan and add the soy sauce, hot sauce and tahini at the same time so the tahini dissolves a little and coats the the vegies more evenly. Finally add the spices. You can use less dill and thyme, I am a little liberal with them. This is an old favorite of mine!! Enjoy.
