Yam and Raisin Stew


Ingredients (use vegan versions):
  • 3 celery stalks sliced
  • handful pumpkin seeds
  • some sesame seeds*
  • 3/4 cup peanuts
  • 3 leaves fresh basil chopped
  • 1 cup fresh spinach chopped
  • 1/3 cup raisins
  • 1 yam diced
  • 1/2 cup vanilla vegan soymilk
  • 1 large
can tomatoes
  • some curry*
  • 1 onion diced
  • some cayenne pepper*
  • some garlic* Directions:

    *Please vary amounts to taste!

    Combine all ingredients. Bake @350 for about an hour or until yams are soft in a covered baking dish

    These amounts are a rough estimate of what I used to make this delicious (and sweet) dish. Experiment and comment on your success.
